HERRINGS, ORANGES AND FENNEL

 4 oranges
 2 fennel
 3 fillets of salted herring
 6 tbsp evo oil
 pepper

Clean the herring, remove the head and bone it. Cut it into fillets that are not too thin.

Take your oranges and peel them raw, then cut them into slices.

Clean the fennels and cut them into thin slices

Now make a layer of fennel, a layer of orange, and finally the herring on top.

Season with oil and pepper. Serve the Sicilian herring salad on the table as an appetizer, either immediately or after letting it sit in the refrigerator for at least 15 minutes.
