 400 g margherita pasta
 8 anchovies fillets
 100 g pine nuts
 100 g raisins
 200 g extra virgin olive oil
 200 g breadcrumbs
 200 g tomato paste
 100 g white wine
 chili
 salt
 1 garlic clove
 50 g shallot
 1 bunch of parsley

To prepare pasta with Aspra anchovies clean the shallot and chop it with a knife. Clean the garlic and crush it.
In a saucepan, sauté shallots with olive oil for one minute.

Add the garlic and anchovy fillets, cook, and add the glass of white wine.
As soon as this has evaporated, add the raisins, previously soaked in water, and pine nuts. Cook and add the tomato extract and a few ladles of hot water.

Cook for 15 minutes, then season with salt and chili and remove from heat.

In a nonstick pan, toast the breadcrumbs with a tablespoon of evo oil and a pinch of salt.

Cook margherita pasta, stir-fry it in a pan with some seasoning , serve on a plate and season with more seasoning . Sprinkle with breadcrumbs and chopped parsley .
