

Pasta alla Norma originated in Catania but, thanks to its success and goodness, it soon spread throughout Sicily.
After all, it is hard to resist a dish of pasta with tomato sauce, fried eggplant, grated ricotta salata and basil to give the dish its touch of Mediterranean freshness that characterizes the dish.
Begin the preparation of pasta alla Norma by cutting the eggplants into cubes and soaking them in plenty of water and salt. Place a plate over the eggplants and a weight on top of the plate so that they remain completely submerged in the water. Let the eggplants soak for about one hour. Then dry them well with a dry tea towel, fry them in hot oil and salt.
Bring water to a boil to cook the pasta. Meanwhile prepare the sauce by starting and browning garlic with a drizzle of extra virgin olive oil. Then add the sauce and dilute with half a cup of water. Season with salt and pepper if necessary.
When ready, remove the garlic and add the basil leaves.
Drain the pasta and season with the sauce and add fried eggplants. Serve pasta alla Norma with grated ricotta salata.
