

To Prepare this sicilian sesame nougat or "Cubbaita" first, place in a saucepan, the sugar and melt it over low heat. As soon as the sugar has liquefied, incorporate the honey.
Add to the saucepan, the sesame a little at a time, continuing to stir.
Now add the orange peels and chopped almonds and mix for a few more minutes. Over low heat. You will find that the cubbaita will be ready as soon as it sticks to the sides of the saucepan.
Pour the resulting mixture onto a marble, or wooden surface, previously oiled or wet with water.
Flatten the cubbaita , helping yourself with a rolling pin, and make it about an inch thick.
At this point, with the help of an oiled knife, make cuts in the surface to form diamond shapes or squares. Wait for complete solidification.
As soon as the sesame and almond cubbaita is completely dry, remove it from the work surface and it is already ready to be eaten!
